BLESS Hotel Madrid brings to the capital the haute cuisine of San Sebastian by way of Etxeko, the restaurant of chef Martín Berasategui in Madrid. A glimpse into his avant-garde cuisine and the know-how that has amassed 12 Michelín stars. With his roots as a gastronomic compass: the farmhouses of its parents, the pier of San Sebastián, the orchards, the hunters, the market of La Bretxa...

The gastronomy of origins
In Etxeko Madrid hedonism is cooked with technique, imagination, honesty and the best raw materials that the sea and land offer with each season. Taste it with an à la carte option or the Tasting Menu, an exquisite tribute to the origins of Martín Berasategui that begins with one of his oldest and most beloved dishes: Caramelized strudel of smoked eel, with foie gras, spring onion and green apple.
Flavours of the past reinvented with respect, that also appear in other dishes full of culinary delicate notes such as the oyster with cucumber, sour fruit, kefir and coconut; Poultry egg yolk bathed in herb carbonara, unctuous veil, hints of beet and smoked cheese; or sea bass seated in barnacle marinara, crunchy truffled egg yolk and asparagus extract. That and more. Delicious creations that will forever be remembered long after the night is done, just as Martin intended.

Martín Berasategui, in person, will present ‘El Tilín del corazón’, a fabulous tasting menu of 12 courses with optional paring, that will bring the best of his culinary journey together, all served to you on a delicate platter.
